Channeling my inner housewife.

My Mom makes some of the best homemade fettuccini alfredo around, and I’m not just saying that. Every time she comes to visit it’s my one request for dinner. I’ve attempted to make it before, but no matter how closely I follow the recipe, hers always tastes better. I decided to give it another try this week and whipped up dinner for my friend, Whitney! This was my most successful attempt yet, if I do say so  myself.

Ingredients:
1 bag fettuccini noodles (cook noodles according to package)
1/4 cup butter
1 cup heavy cream
1 clove garlic, crushed (I picked up the store bought kind that is already chopped, use 1/2 tsp.)
1 1/2 cups freshly grated Parmesan cheese
1/4 cup freshly chopped parsley
Salt and pepper

Up next:
Melt butter in a medium saucepan over medium to low heat. Add cream and allow mixture to simmer for 5 minutes. Next up, add garlic and Parmesan cheese. You will want to whisk this together quickly and allow it to heat through. Lastly, add salt and pepper to taste and sprinkle with parsley.

After the noodles are done, pile your plate high, pour on the sauce and imagine yourself sitting on a quaint little patio in Italy. See, much better when you do that! I intended to snap a pic, but it looked too delicious to wait. I’ll be sure to exercise more self control next time.
